Would you like to eat pizza with less guilt? Then you need this recipe in your life!
Grated cauliflower serves as the base for this delicious crust that you can man-handle just like traditional pizza.
This version has a guilt-free margarita topping (with less than 300 calories for half the pizza) but feel free to unleash your culinary creative juices and include more vegetables or shredded chicken breast if you so desire.

Ingredients
Non-stick spray
2 1/2 cups cauliflower, grated (about 1/2 a large head)
1 large egg, lightly beaten
1 1/4 cups shredded light mozzarella cheese
2 tablespoons grated parmesan cheese
Salt and freshly ground black pepper
1/4 cup tomato sauce
1 cup grape tomatoes, sliced in half
2 cloves garlic, sliced
Fresh basil leaves, optional
Directions
Line a pizza baking tray with baking paper. Preheat oven to 200ºC.
Grate cauliflower manually, using a box grater or feed through a food processor until you have two cups of cauliflower crumbles. Place in a large bowl and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool.
Mix the egg, 1 cup mozzarella, parmesan cheese, and salt and pepper to taste. Once combined, pat into a 25cm round on the prepared pizza tray. Spray lightly with non-stick spray and bake for 10 to 15 minutes, or until golden.
Top the pizza with the sauce, 1/4 cup mozzarella, grape tomatoes and garlic. Bake in the oven until melted and cheese starts to brown, approximately 10 minutes. Top with basil to serve.
